iProd 1,1(Tablet?) lives inside, runs iPhone OS 3.1
Ars points to a USBDeviceConfiguration file which lives in the iPhone SDK 3.1 that has a surprising new addition. Included in all of the recent iPhone SDK updates until now has been the iProd 0,1 device file. 0,1 device files typically stand for prototypes in Apple hardware lingo.
As of iPhone SDK 3.1, there is now a new device profile for an iProd 1,1. Theoretically, this means that production "iProd" devices are already being trialled on iPhone OS 3.1. Ars speculates that this could be the tablet or perhaps even an iPod nano with a camera that would run the iPhoneOS (and would therefore have a lot of other goodies).
Frankly, its hard to decide which of these scenarios is more exciting.

May just be placeholders for the new ipod touches that contain video cameras.
that would be iPod3,1 - which also means the 4th Gen iPhone is iPhone3,1 ...
iPhone3,1 is the 3gs not the 4th gen iphone.
I think the 3GS is actually "iPhone2,1" since the 3G was "iPhone1,2" and the original "iPhone1,1". It would therefore seem correct that the next (4th) generation iPhone will be "iPhone3,1".
Why does every thing have to point to a tablet?
Maybe it's the Chinese iPhone which we know will be a different product than the other iPhones world-wide.

As a developer I agree. You'd need a whole new set of apps designed for it.
What Apple really needs to be doing is creating the next gen of Mac OS X with multi-touch. If you look at Snow Leopard, it's getting a lot of small styling changes making it look more like the iPhone OS.

It's interesting that it mentions ethernet. Even though Apple has been moving away from wires, this points to a little different monster than the iPhone/iPod family.

I think it's pretty safe to assume the name is a placeholder for an unreleased product. However, wasn't this discovered in the USB communications plist? Apple could very well be attempting to liscene IPhone OS, with the "iProd" being any generic device that conforms to some hardware specifications. Could also be part of the cat&mouse game with Palm. Maybe established support for third party devices in iTunes?
